So this is definitely one to eat in the sunshine! We started preparing the night before to really get the marinade into the meat and WOW!!
The meat is delicious and loaded with flavour and the beans really add to the dish too! A fantastic meal to treat the family!

Directions
Marinade
Add the Brisket Trim and Marinade ingredients together in a sealed container and let sit overnight in the fridge
For the Rub
Grind the Rub ingredients together with a Pestle and Mortar. Remove the Brisket from the marinade and place on to a tray. Massage in the rub
Cooking the Brisket
Preheat oven or BBQ to 120°C (250°F) Place the Brisket in the oven on a tray or onto the BBQ Rack and cook slowly for 3 hours. After 3 hours, remove the meat from the heat and place in an ovenproof dish Add the Coca Cola and return to the Oven or BBQ. Cook further for another hour After 1 hour, remove the meat and rest on a tray
For the Beans
Chop the Bacon finely and fry in a pan with a little oil Chop the onion and garlic finely and add to the Bacon Deglaze with a splash of Coca Cola Add the peeled tomatoes and juices from the Brisket Simmer until the juices have reduced by half Add the Red Beans, stirring through. Add Salt and Pepper to taste
To serve
Slice the Beef and serve on the beans
